Reactive Lysine
NutriControl is also able to determine the amount of reactive lysine, as guidance for the availability for amino acids. Under influence of heat, moisture and availability of sugars and aldehydes there is a possibility that a maillard effect occurs. This effect makes amino acids less available. Especially lysine is sensitive for the maillard effect because it’s a free amino acid.
