Analysis
Starch can be determined via the polarimetric (Ewers) method and with the enzymatic method. Both methods determine the starch content that is insoluble in 40% ethanol. Starch degradation products up to a chain length of 10 glucose units that are soluble in 40% ethanol are not determined. The soluble starch can be determined in the fraction which is soluble in 40% ethanol.
