Prevention
The typical boar smell is related to the natural substances androstenone, skatol and indole that are present in the meat of boars. To prevent the formation of boar taint, bears are slaughtered before reaching the age that they produce the substances causing boar taint. The other solution to prevent this is to castrate piglets under anesthesia.
Analysis
NutriControl has the knowledge, experience and facilities to detect boar taint in both sensory and analytical terms in products. The detection and analysis of the boar odor components skatol, indol and androstenone takes place very frequently. The analysis of androstenone is performed by mass spectrometry (GC-MS)
